“At Cascina Fontana, we are looking to produce a serious and full wine that can benefit and improve with age. After fermentation, maturation in used oak barriques helps to soften the wine and adds a touch of elegance, while tempering the natural aggression that comes from an elevated acidity that is the hallmark of Barbera. We use small oak barrels that are five or six years old as we are not looking to impart the pronounced flavours of new wood in our wines, simply to help refine the wine and aid in its evolution. After a year in these barrels, our Barbera ages in vat and bottle for at least a further year. Barbera can accompany antipasti, salumi, pasta dishes, roast meats, and aged cheese. In fact, we consider that it goes well with just about everything!”
