The 2015 Pinot Gris Lieu-dit Schimberg offers a very clear, pure and fresh nose of crushed volcanic rocks. Picked late on September 22, this is a pure, very piquant and mineral Pinot that did not want to ferment further. It is full-bodied, round and piquant on the palate, and finishes with a nice grip and stimulating salinity. This is a very promising wine that simply did not want to ferment drier, says Jean Dirler.
