"There are less sensations of the biological aging in the 2021 Camino del Pilar Crianza Biológica, with less flor character than the 2018, where it was more pronounced (I had tasted a bottle a few days before), or the 2022 that I tasted next to it. The grapes were picked in August, quite late for the grape even in a cooler year. It fermented in stainless steel and aged one year in Sherry casks and one year in glass demijohns. Albillo Real is a finicky grape and often behaves contrary to what you expect. In a cooler year like 2021, the wine feels heavier than the wine from 2022 that I tasted next to it, which was super warm and dry. This has an oily texture and a glossy palate.
