Showing poise and energy, it's utterly delicious, with flavors of white peach, lime, Williams pear and tangy saline mineral sensations. Winery Tasting Notes:

Color: Pale Straw yellow with greenish highlights in its youth, evolving towards golden hues with bottle age.

Nose: Fresh and complex, distinguished by pronounced iodine-like and wet stone notes that immediately express its connection to the volcanic soils from which it originates. The bouquet opens with elegant floral aromas of elderflower, jasmine, acacia blossom and narcissus, followed by intense fruit notes of yellow peach, limoncella apple and pear, complemented by delicate tropical hints of pineapple and nuances of ripe citrus fruit. Mediterranean aromatic herbs, with notes of sage and wild mint, complete the aromatic profile, leading to a finish characterized by delicate hints of fresh almond and refined citrus nuances.

Palate: Direct and vertical on the palate, fresh, dry and saline. The balance between tension and structure lends elegance and precision, carrying through to a long, persistent and harmonious finish.

Pairings: Perfect partner for a wide range of dishes: as an aperitif with tempura vegetables, battered zucchini flowers or a cone of fried fish; and first courses, especially fresh pasta with delicate sauces, vegetable quiches, fish, shellfish and cheese soufflés. It goes best with sweet-tinged creamy dishes, such as the signature dish of local tradition, the Baccalà mantecato (creamed cod fish), best tried on a crispy black charcoal waffle and lime zest.
